Rufus Teague Blazin' Hot BBQ Sauce Wings


Rufus Teague Blazin' Hot BBQ Sauce Wings
With homemade blue cheese dressing
Recipe by Brad Leese

INGREDIENTS

• 1 Bottle of Rufus Teague Blazin' Hot BBQ Sauce
• 2 dashes liquid smoke flavoring
• 1 1/2 pounds chicken wings, separated at joints, tips discarded.

DIRECTIONS

1. In a large bowl, pour the Rufus Teague Blazin' Hot BBQ Sauce over the chicken wings in a medium sized bowl, cover, and let the wings marinate in the refrigerator 1 hour or up to overnight.

2. Preheat the grill for low heat.

3. Lightly oil the grill grate. Arrange chicken on the grill, and discard the remaining BBQ sauce marinade. Grill the chicken wings on one side for 20 minutes, turn-over. Continue grilling 25 minutes, or until juices run clear.

Note: Recipe also works great with Rufus Teague Honey Sweet BBQ Sauce and Rufus Teague Touch O’ Heat BBQ Sauce.

Homemade Blue Cheese Dressing/Dip

INGREDIENTS

• 3/4 cup sour cream
• 1 1/4 cups mayonnaise
• 1 teaspoon Worcestershire sauce
• 1 teaspoon Balsamic Vinegar
• 1 tablespoon milk
• 1/2 teaspoon dry mustard
• 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper
• 4 ounces blue cheese, crumbled

DIRECTIONS

1. In a large bowl, whisk together the sour cream, Balsamic vinegar, milk, mayonnaise and Worcestershire sauce. Season with mustard, garlic powder, salt and pepper. Stir in blue cheese. Cover, and refrigerate for at lease 24 hours before serving.

Note: You can never go wrong by serving some celery sticks with the wings and dressing/dip!

Wood Pellets, a great way to enhance meat flavor!

Wood Pellets are made from natural wood by evacuating all of the air within the cellular structure of the wood. This allows the wood to be compacted into a very dense form. Pellets yield intense smoke quickly which in-turn helps seal the meat, lock in the moisture and add flavor.

It is cheaper to use wood pellets since you normally only need 1/3 of a cup of pellets for most cooking events. The cost per use (10 uses per 1 lb. bag) will leave less of a hole in your pocket than that of wood chips.

The pellets come from sawdust that has been shaped by applying high heat and pressure any contaminants present in the wood are eliminated. This process produces a smoking wood product of consistent quality. Each flavor is produced from the wood species it is named after. Jack Daniel’s® Smoking Pellets in made using mellowing charcoal from the distillery which is pulverized and blended with sawdust and is then transformed into a palletized form.

Using pellets is much easier since you do not soak them in water before use like you do when using wood chips. They also offer more versatility by allowing you the option of blending more than one flavor together to achieve a personalized flavor.
To use the pellets, simply place 1/3 of a cup of pellets in the smoker box (lining the box in foil reduces cleanup time) and place the box on the grill right above the flame. When the smoke starts coming out, place your food on the cooking grate and close the cover of your grill. Smoke normally last up to 30 minutes depending on the temperature of your grill.

The Story behind these great doughnuts is below; it's worth a read defiantly if you ever get the chance to stop by the bakery in person one morning and stand in line for the 20 plus minutes it usually takes to get your order in, and yes, they are that busy, but it's always well worth it!

Reinhold R. Moehring opened the Lone Star Bakery in 1926 in the Round Rock Main Street building where Kelley Cleaners now stands. Moehring and his wife ran the bakery for over 30 years. Moehring worked in a Georgetown bakery before opening his own shop in Round Rock. His son, “Red” Moehring worked in a Georgetown building where his father used to work.

Moehring began experimenting with dough recipes in the 1930s in an effort to produce a specialty product that would enable his small-town bakery to survive. By the early 1940s he had perfected the artistic creation which made his bakery unique—the renowned Round Rock Doughnut.

The tasty treat gained local recognition through the wholesale business with nearby towns. It worked its way all over the U.S. via servicemen whose mothers sent doughnuts as well as love. Some tourists, alerted by word-of-mouth, stampeded the bakery door to get a taste of the original doughnut.

Moehring maintained that lack of time and patience produces inferior doughnuts. “It takes hours to make doughnuts properly,” he said. His baker’s day often lasted from 3 a.m. until evening.

At the same time he was experimenting with doughnut recipes, Moehring and an associate, Mrs. Louise Johnson, developed the popular Swedish rye bread which became another Lone Star Bakery tradition. The bread comes from Mrs. Johnson’s basic Swedish rye recipe, with changes in proportions added by Moehring. Molasses gives the bread a dark and sweet flavor; very little rye is evident in the taste. The bread is popularly known as brown, dark or German black bread.

Selma Erlanson, Louise Johnson’s sister, became the second owner of Lone Star Bakery in 1943 when she bought the shop from Mr. Moehring. Selma and Louise ran the bakery from 1943-46, when it was sold to third owner Roy Hester. After Hester’s short stay, the bakery returned to original owner Moehring. In 1949, after a previous move, Moehring moved the bakery to the building that now houses Rubio’s Grocery.

Louise Johnson, fourth bakery owner, bought it from Moehring in 1960. Moehring stayed with the business awhile as part-time baker. Mrs. Johnson continued traditional Moehring favorites and added fruit pies, spice cookies, and baked cinnamon rolls (from the coffeecake dough) to the bakery’s repertoire. She found the bakery business very interesting; she especially enjoyed watching the business grow and meeting her variety of satisfied customers.

Mrs. Johnson, who owned the bakery from 1960-65, remembers making 200 loaves of Swedish rye a day. She had several out-of-state customers who ordered 100 loaves at a time. One fellow picked up his bread via private plane. Swedish rye is still the most popular bread sold at the bakery.

Mrs. Johnson recalls that Moehring also made excellent French bread and round, iced coffeecakes. Moehring built his business on quality rather than variety; his bakery pillars consisted of four basic products—the famous doughnut, Swedish rye bread, white bread, and coffeecake. He sold no cakes and very few cookies.

Charlie Baird, fifth bakery owner, bought it from Mrs. Johnson in 1965. Lack of parking space downtown prompted Baird to build a new Lone Star Bakery in 1970 on West Liberty, its present location. While under Baird’s baker ship, the Round Rock Doughnut was declared the best doughnut in Texas by Texas Monthly writer Richard West. Baird retired from the bakery business in 1978 when he sold the bakery to Jan and Dale Cohrs who continue to operate the bakery today.

Easy steak recipe

Start with a good quality cut of meat.

My family and I really enjoy a good NY Strip, but a nice big Porterhouse isn't a bad cut of steak either.
- Small pad of butter (1 for each steak your cooking)
- Sea Salt

Preheat grill to high for about 15 minutes.
Remove steaks from butcher paper and let stand until they reach room tempurature.
Sprinkle each side lightly with sea salt.
Place on preheated grill and cook for 2 1/2 minutes, rotate steaks 90 degress on the grate and cook for another 2 1/2 minutes. Flip and repeat on the other side. After you rotate 90 degrees on the second side add the small pad of butter on top of each steak and cook for remaining 2 1/2 minutes.

Remove from grill and let stand at room temp. for 4 minutes.

Beer Can Chicken using our Double Barrel Chicken Cooker
The beer adds wonderful flavor and moistness to the grilled meat, but if you don't like beer use something else.
• 12 oz. can beer (your choice on brand)
• 4 lb. whole chicken
• 2 Tbsp. Rufus Teague Meat Rub
• 1 Double Barrel Chicken Cooker
PREPARATION:

Remove giblets from inside chicken, rinse well inside and out and pat dry. Sprinkle outside of chicken with 1 Tbsp. of the Rufus Teague Meat Rub. Sprinkle 1-1/2 tsp. of the rub inside the chicken. Pour ½ the beer of choice into well. Sprinkle remaining 1-1/2 tsp. of the Rufus Teague Meat Rub into the beer.


Hold the chicken upright, with the opening of the body cavity at the bottom, and lower it onto the raised well so the well fits into the cavity opening. Pull the chicken legs forward so it stands upright. Tuck the tips of the wings behind the chicken’s back.


When ready to cook, place the chicken cooker in the center of the hot grill. Cover the grill and cook until the chicken skin is crisp and dark brown. The meat will be cooked through (180°F on an instant-read meat thermometer inserted in the thickest part of a thigh, not touching the bone) in about 1-1/4 to 1-1/2 hours. If the chicken starts to brown too much, loosely cover with aluminum foil.


Using baker’s mitts /gloves carefully transfer the (hot) chicken cooker to a level non-burnable surface. Let the chicken rest for 5 minutes, then carefully lift it off the well, being very careful not to spill the hot beer or burn yourself. Carve the chicken and serve. Serves 4-6

BBQ Steakhouse Chopped Steak

1 lb. ground sirloin
1/2 cup chopped onions
2 cloves garlic, minced
1/2 tsp. each: salt and pepper
1/4 cup Rufus Teague honey Sweet Barbecue Sauce©, divided in half

PREHEAT grill to medium-high heat.
Mix meat, onions, garlic, salt and pepper.
Shape into four 1/2-inch-thick oval patties.
GRILL patties 5 min.
Brush with ½ of the barbecue sauce; turn over.
Continue grilling 5 min. or until medium doneness (160°F).
REMOVE patties from grill.
Top evenly with the remaining ½ of the barbecue sauce.

Getting the Grill Clean and Ready…
For some of us grilling is a year-round event. But others may not be willing to brave the cold just to have a perfectly grilled steak when its 10 degrees outside. If you are one of the warmer weather outdoor cooks you may just be getting your grill out from the back corner of the garage. Don't just start it up, clean it and give it a little TLC.
We have a few tips that will help you to get your grill back in shape for the outdoor cooking season.

Beginning of the Season
(If your not a year-round griller) Take the grill out of your garage or basement. If you are using a gas grill, make sure there are no spiders or cobwebs under the burner knobs or in the grill manifolds (dislodge any you may find with a slender bamboo skewer). If any of the tiny pinholes on the burner tubes are clogged, unclog them with a pin. Make sure the burner valves turn freely: If any feel stuck, spray in a little WD-40. Check that all connections are tight and that there are no holes or worn spots in any of the hoses. And most important: Follow all of the manufacturer's maintenance instructions.

The Grate
The grate is the part of the grill that comes in direct contact with the food, so it should be clean. Fortunately, this is as simple as bringing it up to grilling temperature when you preheat the grill and then scrubbing it with a dry stiff wire brush before adding the food. The heat loosens any burnt-on scraps and sterilizes the grate, while the brush removes the debris. There's no need to scrub the metal with any abrasives or soap. On the contrary: You season a grate, by using it and brushing it clean (washing is unnecessary). Clean your grill grate twice: once before putting the food on and again after grilling. The latter is especially important when you grill fish. Run the grill until any cooked-on bits of food or oils are burnt off, and then clean the grate with your wire brush. With a gas grill simply let it continue burning for 15 to 30 minutes. With a charcoal grill, you may need to rake the partially depleted coals into a pile to concentrate the heat. (Never extinguish used coals with water. Simply cover the grill and close all the vents and let the coals burn out.) Should the coals burn out before the grill grate is clean, hose it down with water and scrub off any burnt-on pieces with a wire brush. Dry it with paper towels to prevent rusting.
The Firebox: In general, the firebox (the metal bowl of a kettle grill or rectangular box of a gas grill) will clean itself in the process of grilling. Of course, any bits of food that have fallen through the bars of the gate or pools of congealed fat should be shoveled out with a garden trowel.

One thing you should clean often is the catch pan, or drip pan, for grease. In terms of more long-term maintenance, barbecue shops sell heavy-duty grill cleaners you can use for removing a season’s worth of soot.
